I love granola and was so overjoyed when I realised I could make my own healthy version. I got this recipe from my sister who lives in New Zealand. I remember the first week I stayed with her — I would wake up in the middle of the night unable to sleep and sneak into her kitchen. She has an enormous food cupboard where she stores her goodies. I'd take handfuls at a time and marvel at the deliciousness of it. I still wonder if she ever realised where it had gone!
The beauty of homemade granola is that you choose exactly what goes in. You can even use gluten-free oats if you like.
Ingredients
- 3 cups of organic oats
- 1 cup of sunflower seeds
- 1 cup of pumpkin seeds
- ¼ cup of sesame seeds
- ½ cup of chopped almonds
- 1 cup of organic desiccated coconut
- 1 cup of coconut oil
- 4 tablespoons of agave syrup
- ½ cup of raisins
Instructions
- Preheat your oven to 180°C.
- Place the oats, seeds, desiccated coconut, and chopped almonds on a large baking tray and mix together.
- Gently warm the coconut oil with the agave syrup until liquid, then pour over the oat mixture and stir well to coat.
- Bake in the oven until golden brown — keep checking and turn the mixture over twice to make sure it doesn't burn.
- Remove from the oven and leave to cool completely.
- Once cooled, mix in the raisins.
- Store in an airtight jar. Serve with almond or coconut milk and fresh berries.
Crunchy, golden, and completely addictive. You'll never buy granola from a box again.
