Tasty Granola Breakfast

I love granola and was so over-joyed when I realised I could make my own healthy version. I got this recipe from my sister who lives in New Zealand. I remember the first week I stayed with her I would wake up in the middle of the night unable to sleep and sneak into her kitchen. There she has an enormous food cupboard where she stores her goodies. I'd take handfuls at a time and marvel at the deliciousness of it. I still wonder if she realised where it had gone!
The beauty of homemade granola is you choose what goes in. You can even use gluten free oats if you like.

Ingredients

  • 3 cups of organic oats
  • 1 cup of sunflower seeds
  • 1 cup of pumpkin seeds
  • 1/4 cup of sesame seeds
  • 1 cup of coconut oil
  • 1 cup of organic desiccated coconut
  • 4 tablespoons of agave syrup
  • 1/2 cup of chopped almonds
  • 1/2 cup of raisins

Instructions

Place the oats, seeds, desiccated coconut, and nuts on a baking tray. Warm the coconut oil with the honey and pour over the oat mixture. Place in the oven at 180 degrees. Cook until golden brown. Keep checking the oats and turn them over twice so as not to burn. When cooled mix in the raisins. Serve with almond or coconut milk with berries. Crunchy yumminess!
