Fancy something really delicious and super healthy for your breakfast or lunch? This is my version of avocado on toast, spiced with yummy cajun spices and smashed up on brown sourdough. Drizzle with a little olive oil, serve with some fresh salad leaves and you have a divine breakfast or lunch. One of my favourites - enjoy!
INGREDIENTS
- 1 ripe avocado
- 6 cherry tomatoes
- bunch of fresh coriander
- squeeze of lime
- 1/2 tsp of cajun spice (more of less - your choice)
- pinch of salt
- 2 spring onions
- pinch of smoked paprika
INSTRUCTIONS
- Cut your avocado in half. With a knife remove stone. Take a spoon and carve out all the flesh. Place on a chopping board. Rip up the coriander and finely chop the spring onions. Add to board with all other ingredients. Now give your chef knife skills a whirl and chop everything together until you've got a lovely coarse mix that still has plenty of yummy texture.
- Heap onto a slice of sourdough toast. Serve with a drizzle of olive oil and fresh salad leaves.
