Fancy something really delicious and super healthy for breakfast or lunch? This is my version of avocado on toast — spiced with Cajun spices and smashed onto brown sourdough. Drizzle with a little olive oil, serve with fresh salad leaves, and you have something truly divine. One of my favourites — enjoy!
Ingredients
- 1 ripe avocado
- 6 cherry tomatoes, halved
- 2 spring onions, finely chopped
- Bunch of fresh coriander
- Squeeze of fresh lime
- ½ tsp Cajun spice (more or less to taste)
- Pinch of smoked paprika
- Pinch of salt
- Sourdough toast to serve
- Drizzle of olive oil to finish
Instructions
- Halve the avocado, remove the stone, and scoop out all the flesh onto a chopping board.
- Roughly tear the coriander and add to the board along with the spring onions, cherry tomatoes, Cajun spice, smoked paprika, lime juice and salt.
- Chop everything together with a large knife until you have a lovely coarse mix with plenty of texture — don't over-blend it, you want it chunky.
- Heap generously onto a slice of toasted sourdough.
- Finish with a drizzle of olive oil and serve with fresh salad leaves.
Ready in under 5 minutes and absolutely worth it. Enjoy!
