Easy Butter Bean Dip

Who doesn't love a dip? This one is an absolute winner, is ready in 5 minutes and uses 90% cupboard ingredients. Why not make up a batch and store it in an airtight container in the fridge? When hunger strikes chop up carrots, peppers, cucumber and celery for a nutritious snack that makes a great alternative to a cuppa and a biscuit! As always think raw, plant-based for optimum health.

 

INGREDIENTS 

  • 1 can of butter beans ( washed )
  • glove of garlic
  • bunch of parsley ( washed and chopped )
  • 1/2 teaspoon of cumin powder
  • 3 tablespoons of olive oil, or good glug
  • 1/2 squeezed fresh lemon
  • salt / pepper
  • water (small amount to help mix )
  • chili flakes ( optional )

 

INSTRUCTIONS

  1. Place all ingredients in a blender except the water
  2. Mix well 
  3. Gradually add a tiny amount of water to help smooth the dip, be careful not too much or it goes sloppy
  4. Add chilli flakes if you like some extra heat
  5. Store in an air tight container in the fridge
  6. Serve with crudité
